Our ducks come from the happy free-range farm Spargelhof Kremmen. We were able to see for ourselves that the animals there are really well looked after. They get nice and crispy in the smoker and are a must on the table in winter.

Celery and apple soup with apple jelly and nasturtium
2nd course
Yellow beetroot from the salt dough, beet puree and tartare, smoked tahini sauce, aniseed and pickled beetroot
3rd course
Free-range Brandenburg duck (or vegan celeriac "ham") with red currant cabbage, Berlin white cabbage, potato dumplings with nut butter breadcrumbs and duck jus
4th course
Pumpkin pie with Crème Chantilly
